Gourmet Potatoes
List of Ingredients
6 medium potatoes
2 cups shredded Cheddar
1/4 cup butter
1 1/2 cups sour cream
Paprika
1/3 cup green onion, finely chopped
1 tsp salt
1/4 tsp pepper
2 Tbs butter
Recipe
Preheat oven to 350 degrees.
Cook potatoes in skins & cool. Peel and shred coarsely. In a saucepan over low heat, combine cheese and the 1/4 cup butter; stir occasionally until almost melted. Remove from heat and blend in sour cream, onion and seasonings. Fold in potatoes. Turn into a greased 2 qt casserole. Dot with 2 Tbs butter and sprinkle with paprika. Bake uncovered for 30 minutes or until heated through.
