    Hashed Brown Potatoes

    List of Ingredients




    3 cups cubed cooked potatoes(about 4)
    1/4 cup minced onion
    1/4 cup minced parsley or spinach
    3 Tbs flour
    1 ½ tsp salt
    1/2 tsp pepper
    1/4 cup light cream
    3 Tbs bacon drippings

    Recipe



    Combine potatoes with onion, parsley, flour, salt and pepper; toss lightly to mix well. Stir in cream. Heat 2 Tbs drippings in heavy 8 inch skillet. Spread potato mixture in skillet, packing down with spatula. Brown over medium heat until bottom is crusty, 10 to 15 minutes. (Shake pan constantly from side to side to prevent sticking.) Lift to hot platter, browned side up. Scrape and wipe pan free of crumbs with paper towel. Heat 1 Tbs. drippings in skillet. Slide potato "pancake" back into skillet, browned side up. Brown 5 to 10 minutes, shaking constantly, and firming edges with spatula. Turn onto hot platter; cut in wedges to serve.

    Makes 6 servings.
