    Herb and Tomato Green Beans

    1 pound fresh green beans
    3 Tbs olive oil
    2 Tbs minced onion
    1 clove garlic, minced
    2 Tbs sun dried tomatoes
    1 Tbs fresh basil, or 1 tsp. dried, crushed
    1/2 cup black olives, sliced

    Wash green beans, leaving them whole.
    Add to boiling, salted water and cook for about 8
    minutes. Drain well and set aside. Heat the olive
    oil in a large skillet. Add the onions and the garlic
    on LOW heat, so as not to scorch the garlic. Cook
    2 minutes. Add the tomatoes and basil. Cook for
    3 more minutes. Add the drained beans and cook
    for 4 more minutes. Stir in the olives and serve.
