Potatoes Romanoff

4 medium Russett potatoes
1 cup sour cream
4 green onions, sliced
1-1/4 cups shredded sharp Cheddar cheese
1 tsp salt
1/8 tsp pepper
Paprika
Cook potatoes in jackets until tender. Peel & shred. Combine
shredded potatoes with sour cream, onions, 3/4 cup cheese, salt
& pepper. Turn mixture into buttered 1-1/2 qt. casserole dish.
Sprinkle with remaining cheese & paprika. Bake, uncovered, in 350
degree oven 30-40 min.
Makes 4-6 servings.
Note: Potatoes Romanoff may be assembled ahead & refrigerated
until time to bake & serve.
