    Spinach Pesto for Vegetables

    List of Ingredients




    6 cups raw spinach, rinsed
    4 cloves garlic, peeled
    2 Tbs extra virgin olive oil

    Recipe



    Pulse garlic and oil in food processor. Add half of spinach and pulse until fine.
    Scrape pesto away from sides, add other half spinach and pulse again.

    Serves 6

    Serving suggestions:
    Fold into mashed potatos, or slice a baked potato and spoon inside
    Stir into rice or orzo pasta
    Stuff baked squash
    Put a spoonful on tossed salad
    Spread on hearty bread with fresh tomatos and a little red onion
