2 19-oz cans black beans, drained (or 4 cups cooked black beans)
2 10-oz packages chopped spinach, thawed, drained
32 oz picante sauce
2 cups frozen corn
2 tsp ground cumin
Whole wheat tortillas
Shredded cheese
Chopped onion
Chopped tomato
Shredded lettuce
Recipe
Combine beans, spinach, and picante sauce in a non-stick pot over medium heat. Mix well, mashing about half the beans with a fork. Add corn and cumin. Cook over medium heat, stirring frequently, until hot and bubbly.
Fill whole wheat tortillas with bean mixture and add onion, tomato, lettuce and cheese as desired.
This filling may be frozen.
