Wheat Berry Salad

Recipe Introduction
Wheat Berries: the basic recipe is to combine 1 3/4 cup liquid
in a pan with 1/2 cup of rinsed wheat berries, adding a dash
of salt. Bring to a boil, reduce heat, cover and simmer for one
hour til tender. Drain and cool for salads. There are different
methods, including some that soak the berries over night. Rinse
the wheat berries and place in a bowl with a cover. Add water to
cover the berries by 2 inches or so. Stand at room temperature
for 8 to 10 hours. Drain, then use as directed.
1 cup wheat berries, soaked for 8 to 10 hours and drained
1/2 cup dried cranberries or cherries
1/2 cup toasted pecan, whole or pieces
1/2 cup red onion, sliced very thinly
1/3 cup Italian, Caesar or vinaigrette dressing
Place wheat berries in a medium saucepan. Add 6 cups of
cold water. Bring to boil, reduce heat to medium and simmer
for an hour until berries are tender. Drain and place in a
salad bowl to cool. Add the remaining ingredients and toss
lightly. Serve immediately or chill til ready to serve.
