    List of Ingredients


    • 1 lb. potatoes peeled and cut into 1/2'' cubes
    • 1/2 cup coarsely crushed rich round crackers
    • 1 tbsp. butter, melted
    • 1/4 cup butter
    • 1/4 cup all- purpose flour
    • 3/4 tsp dried dill
    • 1/2 tsp. salt
    • 1/8 tsp. black pepper
    • 13/4 cups milk
    • 1 cup shredded sharp cheddar cheese
    • 1 10 oz pkg frozen peas, thawed
    • 1 2 oz jar diced pimientos, drained


    Instructions


    1. In a large saucepan combine potatoes and enough water to cover.Bring to boiling . Cook, covered for three minutes. Drain, set aside.
    2. Meanwhile, grease a 2-quart rect baking dish, set aside. In a small bowl combine the crushed crackers and the melted butter, set aside.
    3. For sauce, in a large saucepan melt the 1/4 cup butter. Stir in flour, dill salt, and pepper. Add milk all at once. Cook ans stir over med. heat until thick and bubbly. Remove from heat. Add cheese, stir until melted.
    4. Combine potatoes, peas and pimientos in prepared baking dish; pour sauce over all. Sprinkle with cracker mixture Bake, uncovered, in a 350* oven about 30 minutes or until potatoes are tender.
