    Banana Oatmeal Cake

    My friend Ev gave me this recipe.

    Recipe Introduction

    This recipe calls for buttermilk or sour milk. Whenever a recipe calls for this.. you can make your own. This is how: Take a 1-cup measuring device. Add 1 tablespoon of white vinegar. Add milk to the 1-cup line and stir. Let it sit for about 5 minutes and then use as much is needed in the recipe. I frost this cake with a cream cheese frosting, but you can use any frosting you like. My friend Ev uses a chocolate frosting on her cake.

    List of Ingredients

    2 cups flour
    1 cup rolled oats
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon nutmeg
    1/2 cup shortening
    1 1/4 cups sugar
    2 eggs
    1 teaspoon vanilla
    1 1/2 cups mashed ripe bananas (3-5)
    3/4 cup sour milk or buttermilk

    Recipe

    Cream shortening, sugar, eggs, and vanilla together on medium speed of electric mixer until light and fluffy.

    Add dry ingredients alternately with banana and buttermilk, mixing lightly after each addition.

    Spread batter in greased 13x9-inch cake pan.

    Bake at 350F for 35-40 minutes, or until toothpick inserted in center comes out clean.

    Cool 10 minutes. Top with icing.




    CREAM CHEESE ICING


    1 8oz. package cream cheese…..softened

    1 cup powdered sugar

    4 tablespoons butter…….softened


    Cream all together, ice cake and refrigerate.
