Chicken Reuben Casserole

Recipe Introduction
You might like to use a crock pot for this. .. or you may like chicken breasts instead. Thighs make for a much more tender dish. I mention to use 3 pounds of sauerkraut only because the kraut seems to get lost after it's baked for 90 minutes and we love to have that delicious kraut and juice over mashed potatoes. You can adjust the kraut amount to your liking. I love it when it gets cooked down and all brown and caramlized. If you have extra sauerkraut leftover... try topping hot dogs with it for lunch or another meal.
List of Ingredients
6 skinless chicken thighs (bone in)
1 cup Russian dressing
3 pounds sauerkraut
1 pound Swiss cheese
salt and pepperRecipe
Season chicken thighs with salt and pepper to taste.
Pour 1/2 of dressing in large casserole dish or roasting pan with cover.
Top with seasoned chicken thighs.
Surround with sauerkraut.
Cover and bake at 350 degrees F for 90 minutes.
Remove from oven.. uncover and top with Swiss cheese.
Return to oven uncovered until cheese melts.
Serve with remainder of dressing drizzled over top.
