    Moist and delicious meatloaf is good for sandwiches, too!

    List of Ingredients

    Meatloaf

    2 eggs
    2/3 cup milk
    3 slices bread, torn into pieces
    1/2 cup onions, chopped
    1/2 cup carrots, grated
    1 cup cheddar cheese, shredded (or your favorite cheese)
    2 TB dried parsley
    1 teaspoon salt
    1 teaspoon each: basil, thyme, and sage
    1 teaspoon pepper
    2 1/2 pounds ground beef


    4 sliced bacon


    Topping:

    1 TB brown sugar
    1 cup spaghetti sauce
    1 TB mustard

    Recipe

    Preheat oven to 350° degrees.
    In a large bowl, beat eggs.
    Add milk and bread; let stand a few minutes until the bread absorbs the liquid.
    Stir in the rest of ingredients except beef and mix well.
    Add beef and mix well.
    Shape meat into 2 loaves.
    Place on baking sheet with sides to catch drippings.
    Combine topping ingredients and brush some of it over the meat loaves.
    Cover each meat loaf with 2 slices of bacon and brush with more topping.
    Bake meat loaves for about 45 minutes to an hour, brushing now and then with topping.
    Let stand 10 minutes before cutting.
