Peanut, Coconut and Oatmeal Cookies

List of Ingredients
1 1/2 cups brown sugar
3/4 cup white sugar
1 cup shortening
2 large eggs
1 tsp. baking soda
2 1/2 cups all purpose flour.
1/2 cup coconut
1 cup salted dry roasted peanuts
1 1/2 cups oatmeal
Recipe
Cream shortening and sugars, add eggs.
Gradually add flour.
Fold in the coconut, peanuts, and oatmeal.
Bake at 375 degrees F for 10 to 12 minutes, or till very lightly brown.
I have found that a trick to making good cookies is to slightly under bake them, then take them out of the oven and let sit on the pan. That finishes baking them and they are so much more tender.
