Potato Soup

List of Ingredients
1 stick butter
1 large onion, chopped
4 celery stalks, chopped
1 carrot, diced
10 cups water
8 chicken bouillon cubes
5 pounds all purpose potatoes (washed and cut into small cubes) If you like, you can peel them. I don't.
1/4 tsp. white pepper
1/4 tsp. garlic salt (optional)
pinch of thyme and marjoram
1 block (8-ounces) cream cheeseRecipe
Saute' onion, celery and carrot in butter in large dutch oven/soup pot
Add water and bouillon cubes.
Bring to boil.
Add cubed potatoes and seasonings
Stir and cook until potatoes are soft.
Smash some potatoes in the soup to thicken.
Lower heat and add cream cheese until melted.
NOTE: You can top with cheese or bacon when serving.
