    GRASSHOPPER CAKE

    List of Ingredients

    1 box white cake mix (plus the ingredients to make the cake : egg whites, oil and water.

    2-1/2 teaspoons of mint extract, divided. (Not peppermint.. Not spearmint... MINT extract which is a blend of both together. I get McCormick Mint extract.

    Green food coloring (about 50 drops for the cake and 9-10 drops for the Cool whip.)

    1 container (8 ounces) Cool Whip (thawed)

    1 jar (16 ounces) hot fudge sauce (I used Mrs. Richardsons found in the ice cream topping aisle.)

    Creme DeMenthe chocolate candies, chopped for on top. (I found a bag of Andes Candies pieces that came in a 12 ounce bag like chocolate chips come in and used that)




    Recipe

    Preheat oven to 350F.
    Make cake according to package directions while adding the 50 drops of green food coloring and two teaspoons of mint extract.

    Pour into greased and floured 9x13 baking pan. Bake for the amount of time on the cake box.

    Allow cake to cool completely.

    Pour hot fudge sauce on top. (you might have to microwave a little to get it to spreading consistency ) and let that cool for a while before putting the topping on.

    Add 6-10 drops of green food coloring and 1/2 teaspoon of mint extract into the whipped topping and stir to combine.

    Spread over the cooled and set fudge sauce.

    Top with the chopped candies or the bag of Andes baking chips.

    Refrigerate cake.
