CRUST:
1 regular size package of Oreo® Cookies (crushed into fine crumbs)
ICE CREAM LAYER:
1/2 gallon vanilla ice cream (a little softened so you can spread it over the frozen cookie crust)
2 cups chopped salted peanuts (optional)
TOPPING:
2/3 cup semi-sweet chocolate chips
2/3 cup powdered sugar (confectioners' sugar)
1/2 cup butter
1 1/2 cups EVAPORATED milk (not sweetened condensed milk)
1 teaspoon vanilla
Recipe
COOKIE CRUST:
Crush cookies with rolling pin or in food processor. Mix with 1/2 cup melted butter.
Press into 9x13 baking pan. (I use the disposable aluminum pan with a lid). FREEZE
ICE CREAM LAYER:
Spread 1/2 gallon of vanilla ice cream over cookie crust.
Press chopped salted peanuts into ice cream. RETURN TO FREEZER.
TOPPING:
Gently boil topping ingredients (chips, powdered sugar, butter, evaporated milk) for about 8 minutes. Stir in vanilla.
Let the chocolate cool completely and then pour over ice cream layer and FREEZE.
When chocolate layer is frozen it's ready to eat! Cut into small squares as this is a very rich dessert.
