1 cup raisins
2/3 cup boiling water
1 teaspoon instant coffee
1 teaspoon cinnamon
BATTER
1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup milk
ICING
1/2 cup butter
2 cups icing sugar (confectioner's sugar, or powdered sugar)
2 tablespoons milk (or enough to make icing of spreading consistency)
1 teaspoon vanilla
Chopped walnuts (optional)
Recipe
Pour boiling water over raisins.
Sprinkle with instant coffee and cinnamon.
Let cool.
Meanwhile, mix all batter ingredients together.
Pour liquid off raisins and add liquid to batter.
Mix well.
Add raisins to batter.
Pour mixture into jelly roll pan(10x15)and bake for 20 minutes at 350° degrees F.
Let cool.
Meanwhile, make icing:
Cream butter.
Add icing sugar.
Add milk, a little at a time, and blend well.
Blend in vanilla.
When cake is cool, frost with icing.
Sprinkle with chopped walnuts if desired.
Cut into squares.
