    HEALTHY WALNUT MACAROONS

    List of Ingredients




    2 cups walnuts
    3 egg whites
    3 tablespoons unsweetened coconut flakes
    1/2 teaspoon pure coconut extract
    1/2 cup Splenda

    Recipe



    Pre-heat oven to 350 degrees F.
    Process walnuts in a food processor.
    Add in the coconut flakes after the walnuts are processed and blend well.
    In a separate bowl whip egg whites into fluffy peaks; then beat in coconut extract and Splenda.
    Carefully combine nut mixture with egg mixture.
    Blend well.
    Using a small scoop or spoon, place 30 to 36 small mounds of the mixture on a cookie sheet lightly sprayed with
    cooking spray.
    Bake at 350 degrees F for 15 minutes.
    Cool on a wire cake rack.
    Store in a container with a tight fitting lid.
    Makes approximately 3 dozen macaroons.
