    Southwester Quinoa Vegetable Casserole

    List of Ingredients

    1 (14 ounce) can Rotel Tomatoes

    1 (15 ounce) can whole black beans, drained

    1/4 cup sliced jalapenos (or a small can of green chilis if you can't take the heat)

    1 cup frozen corn

    1/2 cup vegetable broth (or any broth you prefer)

    3/4 cup quinoa (rinsed)

    1/2 teaspoon garlic powder

    1/2 teaspoon ground cumin

    1/2 teaspoon ground coriander

    1/4 teaspoon salt

    1/4 teaspoon pepper

    1 cup grated cheddar cheese

    sour cream (optional)

    Avocado or guacamole (optional)

    Fresh Cilantro (optional)

    Recipe

    Preheat oven to 400 degrees F

    Combine all ingredients except cheese, sour cream, and avocado/guacamole in a 2 quart casserole.

    Cover with foil or lid and bake for 30 minutes.

    Remove from oven and stir.

    Replace cover and return to oven and bake for another 20 minutes or until all liquid has been absorbed and quinoa is tender.

    Cover with cheese and bake or broil until cheese is melted (usually around 1 or 2 minutes).

    Sprinkle with freshly chopped cilantro.

    Serve with sour cream and avocado/guacamole.
