Mock Crab Cakes

List of Ingredients
1 egg beaten
1/2 tsp. Old Bay seasoning (seafood seasoning)
Pinch of black pepper
Pinch of salt
1 TB chopped green pepper
1 TB freshly minced onion
1 tsp. prepared mustard
Dash of Louisiana hot sauce
3 ounces crabmeat (real or imitation)
1 TB bread crumbs, instant mashed potatoes, or cracker crumbs (optional)
1 cup shredded zucchini squeezed dry with a paper towel
Recipe
Beat egg well.
Add remaining ingredients and mix well. Set aside.
Heat a non-stick pan over medium heat. When hot, spray with cooking spray to coat.
Drop zucchini/crab mixture onto hot pan to form about four medium size crab cakes.
Let them cook until lightly browned on bottom and partially set.
Turn and continue to cook over low heat until centers are just done.
To keep them tender, don't overcook.
