Lentil Soup My Way

List of Ingredients
2 TB oil
2 cloves garlic, pressed
2 medium onions, minced
2 celery ribs, minced
2 carrots, finely chopped
2 cups dry lentils
9 cups water
6 chicken bouillon cubes
3 bay leaves
1/2 cup dry barley, cooked in water for amount of time suggested on barley package.
1 quart jar of Colonna Vodka pasta sauce
1 McCormick Beef Stew Seasoning packet
Recipe
Saute' garlic, onions, celery and carrots in oil until partially softened and fragrant.
Add water, lentils, bay leaves and chicken bouillon cubes and bring to a boil until lentils are soft.
Fish out bay leaves and discard.
With an immersion blender, blend some of the soup in pot until well blended. (or you can process some in a blender or food processor and add back to the pot).
Bring back to boil and add cooked barley, McCormick seasoning packet and pasta sauce.
Heat until boiling again and serve with crusty bread or crackers.
