    1/3 cup Bisquick (or any buttermilk baking mix)
    1/4 cup parmesan cheese
    1/8 tsp. each salt and pepper
    1 TB. grated onion
    2 eggs lightly beaten
    ________________________________________________________

    2 cups grated zucchini

    Recipe



    Mix above ingredients.

    Fold in:
    2 cups grated zucchini

    Drop by tablespoons onto hot oiled pan and fry on each side until golden.
