Dutch Apple Upside-down Cake
Recipe Introduction
This is a great coffee cake or dessert you will be proud to serve most guests. The aroma will fill any house with a warm welcome. It is best cooked in a cast iron skillett.
List of Ingredients
- 4 Apples-peeled, cored and cut in chuncks
- 2 Eggs, lightly beaten
- 1/2 cup Butter, melted and cooled
- 1 1/2 cup Flour
- 1 teas Vanilla
- 1 1/2 cup Sugar
- 3 Tblsp Cinnamon, ground
- 1 Skillett, Cast Iron 8" and warmed
Instructions
- Heat oven to 375 F. Either use a spray grease or use shortning and coat the inside of the fry pan.
- Prepare the apples by peeling, coring and slicing into chunks.
- Mix 1/2 cup sugar and half of the cinnamon and toss the apples with it. Hold the remaining (if any) to the end.
- Place these in the bottom of the greased skillett.
- Prepare the other ingredients in a large bowl. Start with the liquid ingredients, then add the sugar, remaining cinnamon and flour.
- Fold all of these together and pour over the apples in the skillett.
- Drizzle the remaining sugar/cinnamon coating on the top of the batter.
- Place the completed skillett into the oven for 45 minutes.
- Remove skillett and run knife around edge to ensure release of cake.
- Invert skillett over plate to release. Allow it to rest for a few moments before serving.
- It could be served hot with ice cream on top (your choice of flavors), or cooled for coffee cake.
Final Comments
I hope you find it as appealing to the eyes as my guests have. There is other ways to modify this recipe; adding raisins, pineapple, cherry and/or other fruits.
