    If you have a bunch of tomatoes to use up, this is a great recipe for salsa.
    Yeild: 4 qt.

    List of Ingredients




    8 c. tomatoes, chopped and drained*
    4 medium onions, chopped*
    2 green peppers, chopped*
    hot peppers to taste*
    1 Tbsp. garlic, minced
    1 sm. can green chilis*
    1 1/2 tsp. salt
    3 tsp. pepper
    2 tsp. chilli powder
    1/2 tsp. cumin (I used 1 tsp.-we love cumin)
    1 c. cider vinigar
    1 6 oz. can tomatoe paste

    Recipe



    Put all veggies, seasoning, and vinigar into 5 qt. stock pot. Heat to simmer. Let simmer for about 10 min, stirring frequently. Add tomato paste and simmer for 15 more min. While hot pour into prepared mason jars. Top with lid and rings.
    * I used food processor to chop the tomatoes, onions, green peppers , hot peppers, and chilis. You can make it as chunky as you like and much quicker than chopping everything into small pieces.
