    MEX-TEX IMPOSSIBLE GREEN CHILE PIE

    I got this out of "A Taste of Mexico" cookbook when I was visiting Eric and Gabriela in Seattle. Gabriela doesn't eat meat, so I was looking for something. I think it would be good with the proper ingredients. I mistakenly used 2 cans of hot jalapenos instead of chiles!


    List of Ingredients


    • 2 (4 oz) cans green chiles, diced and drained
    • 4 cups cheddar cheese, shredded
    • 2 cups milk
    • 1 cup biscuit mix
    • 4 eggs


    Instructions


    1. Heat oven to 425 degrees,
    2. Grease large pie plate.
    3. Sprinkle chiles and cheese in plate.
    4. Put remaining ingredients in blender and blend until smooth.
    5. Pour over chiles and cheese.
    6. Bake for 25 to 30 minutes, until knife in center comes out clean.
    7. Let stand 10 minutes before serving.
    8. Serve with sour cream and/or guacamole.
