MEX-TEX IMPOSSIBLE GREEN CHILE PIE
I got this out of "A Taste of Mexico" cookbook when I was visiting Eric and Gabriela in Seattle. Gabriela doesn't eat meat, so I was looking for something. I think it would be good with the proper ingredients. I mistakenly used 2 cans of hot jalapenos instead of chiles!
List of Ingredients
- 2 (4 oz) cans green chiles, diced and drained
- 4 cups cheddar cheese, shredded
- 2 cups milk
- 1 cup biscuit mix
- 4 eggs
Instructions
- Heat oven to 425 degrees,
- Grease large pie plate.
- Sprinkle chiles and cheese in plate.
- Put remaining ingredients in blender and blend until smooth.
- Pour over chiles and cheese.
- Bake for 25 to 30 minutes, until knife in center comes out clean.
- Let stand 10 minutes before serving.
- Serve with sour cream and/or guacamole.
