Spicy Pumpkin Bread

Recipe Introduction
A nice, tasty treat for Autumn holidays. Best when made a day ahead of time, and wrapped in plastic wrap until serving time. Makes 2 loaves, about 12 slices each.
List of Ingredients
- 3/4 cup butter or margerine
- 2 + 1/2 cups sugar
- 4 eggs
- 1 one-pound can of pumpkin
- 2/3 cup water
- 3 + 1/2 cups unbleached flour
- 2 tsp. baking soda
- 1 + 1/ 2 tsp.salt
- 1 + 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 2/3 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350 degrees. Grease and flour 2 loaf pans.
- Cream butter and sugar in a large bowl. Add eggs, one at a time, beating thoroughly. Mix in pumpkin and water.
- In a seperate bowl, combine remaining ingredients, and mix well. Stir dry ingredients into pumpkin mixture -- a little at a time -- and keep stirring until batter is thoroughly blended.
- Pour batter into loaf pans, dividing an even amount between the two.
- Bake for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 15 minutes before removing from pans.
Final Comments
Serve with whipped cream cheese or butter.
