    Chocolate Pecan Pie

    List of Ingredients


    • 2 ounces unsweetened chocolate
    • 1/3 cup butter
    • 3 eggs
    • 1/3 cup sugar
    • 1/4 tsp. salt
    • 3/4 cup dark corn syrup
    • 1/3 cup rum
    • 1 cup pecan halves
    • 1 unbaked 9-inch pastry shell
    • Whipping cream, to garnish


    Instructions


    1. Preheat oven to 350 degrees.

    2. Melt chocolate and butter together, in the top of a double boiler, over moderate heat. Remove from water, and cool slightly.

    3. Combine eggs, sugar salt, corn syrup and rum in mixing bowl, and beat to blend. Beat in cooled chocolate/butter mixture.

    4. Place pecans in bottom of pie shell, then pour mixture over.

    5. Bake 40 to 50 minutes. Top of pie should still be soft, and the center not quite set when pie is gently shaken.

    6. At serving time, whip cream until it barely holds a soft peak. Serve cream on side, as garnish.
