Chocolate Pecan Pie

- 2 ounces unsweetened chocolate
- 1/3 cup butter
- 3 eggs
- 1/3 cup sugar
- 1/4 tsp. salt
- 3/4 cup dark corn syrup
- 1/3 cup rum
- 1 cup pecan halves
- 1 unbaked 9-inch pastry shell
- Whipping cream, to garnish
Instructions
- Preheat oven to 350 degrees.
- Melt chocolate and butter together, in the top of a double boiler, over moderate heat. Remove from water, and cool slightly.
- Combine eggs, sugar salt, corn syrup and rum in mixing bowl, and beat to blend. Beat in cooled chocolate/butter mixture.
- Place pecans in bottom of pie shell, then pour mixture over.
- Bake 40 to 50 minutes. Top of pie should still be soft, and the center not quite set when pie is gently shaken.
- At serving time, whip cream until it barely holds a soft peak. Serve cream on side, as garnish.
