    Deluxe Cornbread

    Recipe Introduction

    I think the original recipe was from Jiffy, but like every other potluck maven, I've toyed with this one a little. This is an amazingly moist cornbread, with nice crispy edges.

    List of Ingredients

    1 ear of fresh corn, cut off the cob, or about a cup of frozen whole kernel corn (really, don't go with the canned)
    1 can creamed corn
    1 pkg. Jiffy Corn Muffin Mix
    2 eggs
    1/2 stick of butter, melted
    8 oz. sour cream
    1 T honey

    Recipe

    Preheat oven to 350, and grease/spray an 8x8 square baking dish.

    In a mixing bowl, beat together the eggs, sour cream, and creamed corn. In a small dish, microwave the butter and honey together until melted. Beat the butter and honey into the egg mixture, then fold in the fresh corn and the cornbread mix GENTLY until everything is mixed together. (You don't need to beat the crap out of it at this point.)

    Pour into a greased 8x8 square baking dish. Cover with shredded cheese.

    Bake at 375 degrees for about 45 minutes.
