    Microwave Peanut Brittle

    Recipe Introduction

    Nothing short of FABULOUS! You can use any nuts you like, and I often omit the cinnamon.

    List of Ingredients

    * 1 cup sugar
    * 1/2 cup light corn syrup
    * 2 cups salted peanuts
    * 1 teaspoon butter
    * 1/2 teaspoon ground cinnamon
    * 1 teaspoon baking soda
    * 1 teaspoon vanilla extract

    Recipe

    Before beginning the process, butter a baking sheet and put it in a 200 degree oven. The warm pan makes the candy easier to spread.

    In a 2-qt. microwave-safe bowl, combine sugar and corn syrup. Heat, uncovered, on high for 3-4 minutes, stirring once after 3 minutes.

    Heat an additional 4 minutes longer.

    Stir in peanuts, butter and cinnamon (if using).

    Microwave, uncovered, on high for another 3-5 minutes or until mixture turns a light amber color (mixture will be very hot).

    Quickly stir in baking soda and vanilla until light and foamy.

    Immediately pour onto a greased baking sheet and spread with a metal spatula.



    Fluffy's notes: Spray spatulas and utensils with cooking spray. I bought a "special bowl" just for making this - a 2 quart (8 cup) glass measuring cup with a handle, made by Anchor Hocking, found for less than $10 at a kitchen store. Big enough to contain the batch, and the handle helps with safety, cuz this stuff is HOT!
