    Soda Cracker Toffee

    Recipe Introduction

This recipe is beyond tempermental! Don't even try it on a damp, rainy, or humid day!

    List of Ingredients

40 saltine cracker squares (you can also use graham crackers or Club crackers, enough to cover the pan)
1 cup butter, at room temp
    ½ cup brown sugar
    ½ cup white sugar
12 oz. semi-sweet mini chocolate chips
    1/2 cup chopped nuts (optional)

    Recipe

Grease cookie sheet that has sides--I used a 10x15 jelly roll pan (use foil, then grease the foil). Place crackers right side up in a single layer.

Mix butter and sugars in a sauce pan and bring to a boil, stirring constantly. Boil 3 minutes. Spread over crackers and bake at 375 degrees for 5-10 minutes, until bubbling all the way in the middle. WATCH CAREFULLY.

Remove from oven (turn oven off) and immediately sprinkle with chocolate chips, then put back in the warm oven for a few minutes--then smooth out with a knife or spatula (like you're frosting the top). Sprinkle with nuts if desired. Allow to cool.

My notes: make sure to use butter at room temp, or close to it (not out of the freezer). My best results have been using half white sugar and half brown sugar. Put the butter and sugar into a cold skillet together, then bring to a boil over medium-high heat. Use only a wooden spoon. Pray a lot, and don’t feel bad if it doesn’t work – this stuff is very temperamental! And don’t even try making this on a rainy or even damp day!
