    I've tried a lot of mac & cheese recipes, and this is the winner at our house.

    List of Ingredients




    1 stick butter
    1/2 cup of flour
    2 cups of milk
    12 oz can of evaporated milk
    8 oz of Velveeta cheese, cubed
    2 cups of shredded cheddar cheese, or a combo of your favorite cheeses
    2 cups macaroni (dry), cooked al dente (about 6 minutes), drained
    salt & pepper

    Topping: 1 cup of Cheez-it crackers (or similar), crushed, mixed with 2 tablespoons of melted butter (or olive oil)

    In a large saucepan over medium heat, melt the butter. Whisk in the flour to make a roux, cook and stir for a minute or two. Add the milk and evaporated milk, stirring until it comes to a simmer and thickens; cook for two more minutes. Add the cheeses a handful at a time, stirring until melted. Add salt & pepper to taste. Stir in the cooked macaroni, then turn it all into a buttered casserole dish. Top with the buttered crackers.

    Bake at 350 for about 30-40 minutes, til hot and bubbly around the edges, and the topping has browned nicely. Let rest for 10 minutes before serving.
