Bisquick Peanut Butter Cookies

This recipe was originally for the Hershey Kiss cookies, where you just make the dough into a ball, bake it, then press a Kiss into the hot cookie. I discovered that the dough works just great for "regular" peanut butter cookies... just roll the dough ball into sugar, place on the pan, then press with either a fork or a potato masher (easier!). Bake for 11 minutes at 375.
List of Ingredients
1 can sweetened condensed milk
3/4 C peanut butter (I might bump this up to a full cup)
1 tsp vanilla
1/2 tsp salt
2 C Bisquick (feel free to use whatever is your favorite baking mix; I prefer the Jiffy brand)Recipe
In the bowl of a mixer, blend together the condensed milk, peanut butter, vanilla and salt until creamy and smooth. Stir in the baking mix.
Shape dough into balls (about 1 inch). Roll in sugar. Place on baking sheet, then press with a fork or potato masher.
Bake at 375 for 11 minutes. Remove from pans immediately and cool on a rack.
Dough can also be baked in balls; then press a Hershey Kiss into the hot cookie before removing from the pan. Cool on racks.
NOTE: I am almost sure that this dough could be adapted to a "sugar cookie" dough by replacing the peanut butter with straight butter or shortening. Definitely want to give it a try!
