Easy Peanut Butter Bars

Super easy and quick, this recipe makes a 9x13 pan of yummy, chewy peanut butter bars without a lot of mess or time involved.
List of Ingredients
Bars:
1 pkg of peanut butter cookie mix
ingredients called for on package - usually an egg, oil and water
1/3 cup peanut butter
1 tsp vanilla
pinch of salt
Topping:
1 pkg of chocolate chips
1/3 cup of peanut butter
1/4 cup evaporated milk (or half & half)
Recipe
Preheat oven to 350. Spray a 9x13 pan with cooking spray, set aside.
Bars:
In a large mixing bowl, place the cookie mix and the peanut butter. Use an electric mixer to beat the peanut butter into the cookie mix -- this will be crumbly, like when you cut butter into flour for biscuits.
In a small bowl, mix the ingredients called for on the cookie mix package with the vanilla and a pinch of salt. Pour into the cookie mix and beat with the mixer until well combined. Spread the cookie dough evenly into the prepared pan; bake for 12-14 minutes at 350 (you want to see just-brown edges). Remove from the oven and set aside to cool while you make the chocolate to go on top.
Topping:
In a double boiler (or you can use the microwave) melt together the topping ingredients, stirring until well incorporated, melted and glossy. You want this all melted together really well, so that it's spreadable onto the cookie base. If the chocolate mixture seems stiff, you can add more evaporated milk until it reaches a nice spreading consistency.
Spread the chocolate mixture on top of the cookie base. Once the bars have cooled to room temp, you can refrigerate if desired, but it's not necessary. Cut into bars of desired size to serve.
