Recipe Introduction
This is a great shortcut recipe, especially nice during the holidays when you're baking a lot. The cookies come out moist and chewy, and I've NEVER had anyone be able to tell they started with a cake mix!
List of Ingredients
1 box of yellow cake mix
1/2 cup oil
2 eggs
1 T ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cloves
1/8 tsp (pinch) nutmeg
1/4 tsp salt
1 1/2 cups rolled oats
1 cup chopped nuts
1 cup of raisins
1/2 cup (approx) butterscotch schnapps Recipe
Preheat oven to 350. Line a cookie sheet with parchment, set aside.
In a small microwave safe bowl, mix the raisins and butterscotch schnapps together (use enough to just cover the raisins). Heat in the microwave on high for about one minute, until the liqueur is quite warm. Set the raisins and liqueur aside to soak while you mix the cookie dough.
Put the cake mix and spices into a mixing bowl and stir together on low speed to blend the spices evenly into the cake mix.
Add the oil and eggs, mix on medium until everything is well incorporated.
Add the oats and nuts into the dough and mix together. Spoon the raisins out of the liqueur and into the dough, and add 1 or 2 tsp of the soaking liquid into the dough as well. (Don't use all of the soaking liquid, it would be too much.) Give everything one final mix.
Scoop the dough, using a small ice cream scoop, onto the parchment lined cookie sheet, placing nine cookies per batch. Bake at 350 for 15 minutes. Remove cookies to a cooling rack (don't let them set on the hot cookie sheet, they will stick).
Makes approx 20 bakery sized cookies.
