    This recipe came about through trial and error, and a combination of a few different recipes to get what I wanted. This is a quick and easy dessert to throw together for family or for potlucks - fabulous with some good vanilla or butter pecan ice cream.

    List of Ingredients




    Peaches:
    8 cups of frozen peaches
    1/3 cup of brown sugar
    1 teaspoon of vanilla extract
    1/2 to 1 tsp of almond extract (to your taste)
    1/2 cup water
    1/2 package of butterscotch pudding (instant or cook & serve, either is fine)
    1 T butter

    Topping:
    1 box of yellow cake mix
    1 stick of butter
    the remaining half a package of butterscotch pudding

    Recipe



    Preheat oven to 375. Spray a 9x13 dish (preferably glass) with cooking spray, set aside.

    In a large saucepan, combine the ingredients for the peaches. Bring to a simmer over medium heat - you want the mixture to get warm enough to melt the sugar and combine everything.

    While the peaches heat up, melt the stick of butter in a bowl in the microwave. Add the cake mix and the half package of pudding mix and stir with a wooden spoon until combined. This will be rather dry and crumbly.

    Pour the warmed peaches into the prepared baking dish. Crumble the cake mix topping over the peaches.

    Bake at 375 for about 30-40 minutes, until hot and bubbling and the the topping has browned nicely.

    Serve warm, room temp or chilled.
