    Another super easy, one dish meal. You could use pork chops, or any sort of chicken - chicken thighs would be great, or bone-in or boneless chicken breast. I made this to feed four, but it could be halved, or even doubled.

    List of Ingredients




    Potatoes:

    6 yukon gold potatoes, thinly sliced (no need to peel)
    1/2 cup of HOT water
    1/4 cup balsamic vinegar (you could use red wine vinegar)
    1 tsp chicken base
    1/2 tsp steak seasoning
    1/2 tsp of mixed herbs (like Italian seasoning would be fine - I happened to have a mixed herb grinder that contains thyme, parsley, rosemary, marjoram, basil and oregano)

    Chops, or other meat:

    4 pork chops, on the bone or boneless (or any type of chicken parts)
    1 pkg of Buffalo Chicken Wing Seasoning (McCormick makes this, found in the seasoning aisle by gravy mixes)
    Your favorite BBQ sauce

    Recipe



    Preheat oven to 375. Spray a large glass baking dish and set aside.

    Put the sliced potatoes into the baking dish. Mix the sauce ingredients (water, vinegar, etc) in a small cup, then pour over the potatoes. Toss to coat everything evenly, then spread the coated potatoes out in an even layer. There will be some of the liquid pooling in the bottom; this is ok.

    For the meat, place the wing seasoning in a large plastic bag. Put one piece of meat at a time into the bag and shake to coat. Place the meat on top of the potatoes. I know this is odd, but spray the pieces of meat with some cooking spray. Cover the dish LOOSELY with a piece of foil, just sort of laying the foil over the top.

    Place the loosely covered dish into the oven and go do something else for about an hour, then check for doneness. They are probably NOT done, and will need another 15-30 mins. This is when you want to brush some of your favorite BBQ sauce onto the chops. Place the foil back over the dish, loosely, and finish baking.

    That's it! Serve hot immediately, maybe with some broccoli or green beans. Or maybe a salad. Enjoy!
