Salsa Meatloaf

Recipe Introduction
This recipe was adapted from Patti LaBelle’s cookbook. What makes this one different and soooo good is the combination of all the different onions and garlic. If you want to add a little more kick to this meatloaf, add a teaspoon (or more) of chili powder to the recipe.
List of Ingredients
1 ½ to 2 lbs lean ground beef
1 lb bulk sausage
½ c thick bottled salsa
½ c chopped onion
½ c chopped green pepper (optional, if you don’t like ‘em, leave ‘em out)
¼ c chopped green onion (green and white parts)
¼ c finely chopped shallots
1 clove of garlic, minced (1/2 tsp chopped), or more if you like
2 slices of bread, torn into very small pieces, soaked in enough milk to cover
2 eggs
1/2 c dried seasoned breadcrumbs (I've also use crushed cheez crackers instead)
1 tsp seasoning salt (Lowry's or your favorite)
½ tsp pepper
1/2 teaspoon of Mrs Dash original seasoning blend
Recipe
In a large bowl, combine everything (using your hands works best); mix well but do not over-handle the meat – over-handling will make a tough meatloaf. Shape into a loaf and place in a 9 x 13 casserole dish (NOT a loaf pan). Bake at 350 for about an hour, or until a meat thermometer reads 165 degrees when inserted in the center. Let rest for 5-10 minutes before slicing and serving.
