Beer-Cheese Soup

Cheese... and beer ... and garnished with bacon? What's not to love? This is a lovely, simple, basic recipe for a gorgeously creamy and rich soup. You can add extra veggies (carrots and mushrooms are great, or how about a bit of diced red or green bell pepper?), or spice it up with a shot of hot sauce or a pinch of cayenne. Very yummy and very adaptable!
List of Ingredients
1 stick butter
1 med onion, diced
2, stalks celery diced
1/2 cup flour
4 cups chicken broth
12 oz. of beer, one can
1-1/2 cups sharp Cheddar cheese, grated
1/2 tsp dry mustard
Salt and pepper to taste
Bacon, green onion and shredded cheese to garnish.
Recipe
Melt the butter in a heavy soup pot. Add the onion and celery. Cook until just soft. Sprinkle on the flour and cook for 3 minutes, stirring frequently.
Slowly whisk in the broth, then the beer. Bring to a boil. Reduce the heat. Slowly whisk in the cheese. Add the mustard.
Remove from the heat and serve immediately. To reheat, place in a double boiler to prevent scorching.
Garnish with bacon, green onions, and more shredded cheese.
