2nd Place winner at NYS Fair

    List of Ingredients

    2 top round thin steaks
    1 6oz. package sliced pepperoni
    1 cup shredded provolone cheese
    ¼ cup grated locatelli cheese
    6-8 tbsp. Chopped fine parsley
    2-3 gloves garlic

    Fratat:
    4 eggs scrambled
    2-3 tbsp. Parsley
    ¼ cup grated locatelli cheese
    ½ teaspoon salt
    fresh ground black pepper

    Recipe

Make fratat – add scrambled eggs, parsley and locatelli together. Cook in heated greased frying pan until fratat is cooked on both sides, slightly browned. Cool and cut into strips. Cut fat off steaks, salt and pepper steak. Pound steak to tenderize meat. Cut into 6" x 8" pieces to roll. Spread minced garlic over steak. Cover steak with parsley and locatelli cheese. Alternate pepperoni, provolone cheese and fratat across steak. Lead space around edges of steak to roll. Start from smaller end and roll up steak, tucking in ends as you roll. Tie with string around steak and from end to end to hold filling. Cooks steaks in a heated pan with cooking oil to cover steaks half way. Fry all 4 sides of steak. Cool on wire rack. Remove string and roll up with aluminum foil and refrigerate
