This was modification from Joan's Sloppy Joe mac and cheese. I had to discover all original ingredients in place of Joan's combo of canned sloppy joe stuff to be in State Fair.
1 lb lean hamburger, ground 2x
4 cups peeled, cubed potatoes
3 t minced garlic
6 T butter
1 med. Onion
¼ cup flour
½ red bell pepper, Chopped
1 cup each milk, half and half
¾ cup ketchup
½ t. onion salt
1 tbsp. Sweet & Low brown sugar
½ t. garlic chipotle hot sauce
4 T chili powder
½ cup heavy cream
1 t cider vinegar
8 oz. sharp cheddar cheese
1 t. celery seed
4 oz. Velveeta cheese
1 tbsp. Worcestershire sauce
3 oz. cream cheese
1 t. salt
butter
16 Ritz cracker
¼ cup ea chopped grape tomatoes
3 sliced scallions sliced black olives,
minced parsley
Recipe
1. Sauté hamburger until no longer pink
2. Add garlic, onion and red pepper and cook till soft.
3. Add ketchup, sugar, chili powder, celery seed, vinegar , salt, W sauce and stir through.
4. Parboil whole potatoes in boiling water. Peel and cool
5. Cube potatoes
6. To make cheese sauce: In a heavy saucepan over low heat melt butter.
7. Add flour, stir 3 minutes or until roux is frothy and taste of raw flour is gone.
8. Gradually stir in the 2 cups of warmed mixed milk and ½ and ½ into the roux.
9. Turn up heat; stir until sauce is just at boiling point.
10. Turn down heat; let simmer a few minutes. Add onion salt and garlic chipotle sauce
11. Stir in heavy cream; simmer briefly or until flavors are blended.
12. Stir in the cheeses into simmering sauce until melted;
13. combine cheese sauce with potatoes.
14. Spray baking dish with Pam; spread 1 cup of sloppy joe meat on bottom
15. Spread potatoes and cheese and top with 1 cup more sloppy joe mix.
16. Crush Ritz crackers and sprinkle over sloppy joe mix. Dot with butter.
17. Bake in a pre-heated 350° F. oven 30 minutes or until bubbly and light golden brown.
18. Remove from oven. Garnish with scallions, tomatoes, olives and parsley.
