6 T butter
¼ cup flour
1 cup each milk, half and half
½ t. onion salt
½ t. Tabasco
freshly ground pepper
½ cup heavy cream
8 oz. shredded cheddar cheese
4 oz. Velveeta cheese
3 oz. cream cheese
8 oz. small shell macaroni
16 Ritz cracker

Recipe
1. Melt butter in a heavy saucepan over low heat .
2. Add flour.
3. Stir 3 minutes or until roux is frothy and taste of raw flour is gone.
4. Combine milk and half and half and warm in microwave.
5. Gradually stir into the roux.
6. Turn up heat; stir until sauce is just at boiling point.
7. Turn down heat; let simmer a few minutes.
8. Add pepper, onion salt and Tabasco sauce.
9. Stir in heavy cream.
10. Simmer briefly or until flavors are blended.
11. Dice Velveeta and cream cheese
12. Stir the cheeses into simmering sauce until melted
13. Cook macaroni according to box directions; drain.
14. Combine cheese sauce with macaroni
15. Let sit for 15 minutes to absorb some of the liquid
16. Pour into a greased 2-quart dish.
17. Crush Ritz crackers and sprinkle over casserole.
18. Dot with butter.
19. Bake in 350 oven for 30 minutes or until golden brown and bubbly.
