    Vegetarian Creamt Broccoli Topped Pasta

    Low fat version of Deb's

    List of Ingredients




    Pam
    1 c. diced onions
    1 c. diced red bell pepper
    1 small garlic clove, minced
    ¼ lb. Extra firm tofu, crumbled
    1 pkt. Instant chicken broth
    1 c. skim milk
    ¼ lb tangy blue cheese
    3 T fat free cream cheese
    4 c broccoli florets, blanched and chopped
    3 c cooked pasta (I like penne the best)

    Recipe



    Heat frying pan. Spray with Pam.
    Add onions, pepper and garlic and saute until onions are translucent.
    Combine tofu, broth mix and milk in a blender and blend until smooth.
    Pour over veggies and stir until slightly thickened
    Reduce heat to low; add cheeses and cook, stirring constantly until melted and further thickened.
    Stir in broccoli and cook until heated through.
    Serve over hot pasta.
