    List of Ingredients




    6 cups diced potatoes, cut into very small pieces
    ¼ c taco seasoning (1 pkg)
    ½ cup salsa
    16 oz canned fat-free refried beans
    ½ cup diced onion
    ½ cup fat-free shredded cheddar
    3 oz fat-free cream cheese
    1 tomato, diced
    1 avocado, diced
    Flour or corn tortillas

    Recipe



    1. Put potatoes and taco seasoning in large plastic bag and shake to combine.
    2. Pour onto baking sheet and bake in 350 degree oven for about 25 minutes.
    3. Mix together salsa, beans, onion, cheese, cream cheese, tomato and avocado.
    4. When ready to assemble, spread the bean mixture on each tortilla, top with potatoes, roll up, and place in baking pan.
    5. Spray with non-stick cooking spray.
    6. Bake at 350 for 20 minutes
