Tofu Tikka Saag

List of Ingredients
3 lbs. extra firm tofu
5 cloves garlic, minced
2 large onions, minced
2 large tomatoes, crushed
1 inch piece ginger, minced
8 tablespoon yogurt
2 lbs. frozen spinach
1/2 teaspoon crushed red pepper
1 teaspoon coriander powder
1/2 teaspoon turmeric
½ t cardamom
¼ t. ground cloves
1 teaspoon garam masala
1/2 teaspoon salt
Oil
Recipe
Drain tofu in colander overnight. Cut into cubes.
Toss with enough tikka spice mix to coat.
Brown tofu in oil. Drain on towels.
Cook spinach according to directions. Chop in blender with 4 T yogurt.
Heat the remaining oil and add ginger, garlic and onions until lightly brown.
Add tomatoes, salt, cayenne, coriander powder, turmeric, cloves, cardamom, spinach and garam masala and cook until spinach starts sticking to pan.
Add tofu and heat through. Serve on rice.
