    Malted Vanilla Muffins from David


    1 1/2 cups flour
    2/3 cup sugar
    2 teaspoons instant malted milk powder
    2 1/2 teaspoons baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1 egg, beaten
    1 cup vanilla yogurt
    1 1/2 tablespoons vanilla extract
    6 tablespoons melted butter (3/4 stick)
    3 tablespoons sugar + 1 tbl. malted milk powder

    Recipe




    Preheat oven to 375ºF.

    Lightly grease muffin pan cups or line with paper liners. In a large
    bowl, combine flour, sugar, malted milk powder, baking powder, baking
    soda, and salt.

    In another bowl, combine egg, yogurt, and vanilla; pour over dry
    ingredients. Add melted butter and stir just to blend (just a few
    strokes, do not overmix). Spoon batter evenly in prepared muffin pan.

    Sprinkle tops with sugar-malted milk mixture.

    Bake for 18 to 20 minutes or until muffins test done. Cool in pan on
    wire rack.

    Yield: one dozen.
