    Workday Raisin Bran-Berry Muffins


    1-1/2 cups POST Raisin Bran Cereal
    1-1/3 cups flour
    1 Tbsp. Baking Powder
    1-1/4 cups frozen blueberries
    1 egg
    1/2 cup sugar
    1 cup milk
    1/3 cup butter or margarine, melted

    Recipe





    MIX cereal, flour and baking powder in large bowl; stir in frozen blueberries. Beat egg in medium bowl; mix in sugar until well blended. Stir in milk and butter. Add to cereal mixture; stir just until moistened. (Batter will be lumpy.)

    SPOON batter into greased or paper-lined muffin pan, filling each cup 2/3 full.

    BAKE at 400°F for 20 minutes or until golden brown.

    How To: Keep berries completely frozen until stirred into batter. This will minimize bleeding and gumminess in baked muffins.
