    Apple Cheddar Cornbread from David


    1 Tbsp butter
    1 Granny smith apple, peeled & diced
    1 Tbsp shortening
    1 1/2 cups yellow cornmeal
    1/2 cup flour
    1 Tbsp baking powder
    1/2 tsp salt
    1 1/2 cups milk
    1 large egg, slightly beaten
    6 Tbsp butter, melted
    1 cup shredded extra sharp Cheddar cheese


    Recipe



    Position rack in center of oven; preheat to 425°.
    Heat 1 tablespoon butter in large skillet over medium high heat until
    melted. Add apple; saute 3 min or until just tender. Remove from heat;
    set aside.
    Heat shortening in a 9 inch cast iron skillet in oven 5 min.
    Meanwhile, stir together cornmeal and next 3 ingredients. Whisk together
    milk and egg; add to dry ingredients, stirring just until moistened.
    Stir in 6 tablespoons melted butter. Add apples and cheese, stirring
    just until combined.
    Pour batter into hot skillet. Bake for 25 min or until golden. cut into
    wedges and serve.
