Coconut-Banana Cornbread
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1-1/4 teaspoons ground allspice
1/4 teaspoon salt
1 egg, beaten
1 cup mashed very ripe bananas (about 2 medium)
1/4 cup milk
1/4 cup vegetable oil
1/2 cup sweetened flaked coconut
Recipe
Preheat oven to 375°F (190°C). Grease an 8-inch square pan; set aside. In a medium bowl, combine cornmeal, flour, sugar, baking powder, allspice and salt. in another medium bowl, combine egg, bananas, milk and oil. Form a well in center of dry ingredients, add milk mixture all at once and stir just enough to combine. Stir in coconut. Pour mixture into greased pan.
Bake in preheated oven about 25 minutes or until a cake tester inserted in center comes out clean. Cut into 2-inch squares and serve hot with butter.
Variation: Bake in a greased 9-inch round pan. Cut in wedges.
