Cajun Fried Potatoes and Sausage from David
6 potatoes, peeled and sliced
1 tablespoon vegetable oil
1 pound andouille sausage, cut into 1/4-inch rounds (see note*)
1/2 green bell pepper, seeded and diced (see note**)
1/2 red bell pepper, seeded and diced (see note**)
1/2 teaspoon seasoning salt
1/2 teaspoon ground black pepper
1 onion, chopped
Recipe
Place sliced potatoes in a large bowl of cold water and allow to sit
for 10 minutes. Drain, rinse and replace water and allow to sit for
an additional 10 minutes; drain and blot dry with paper towels.
Heat oil in a large skillet over medium-high heat. Add sausage to
skillet and sauté for about 2 minutes. Add potatoes, peppers,
seasoning salt and pepper. Cover, lower heat to medium, and continue
to cook for about 10 minutes, stirring occasionally. Add onion and
cook mixture until ingredients are tender, about 3 more minutes.
Serve warm.
Makes 4 servings.
Note* Use a good brown sausage instead of andouille. Go to a market
that makes their own and look at it and smell it, you want something
spicy with a good smoke flavor.
Note** You can use 1 large green pepper if no red pepper is available
