Banana Pecan Pancake
2 tsp. butter, at room temperature
1 cup flour
2 tsp. sugar
2 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1 egg
1 cup milk
1 banana
1/4 cup chopped pecans

Melt butter.
In a mixing bowl, combine flour, sugar, baking powder, salt, and nutmeg.
Combine egg, milk and butter.
Chop banana. Stir milk mixture, banana and pecans into flour mixture just until mixed.
Heat a large frying pan over medium heat. Brush with oil. Pour batter into pan by scant 1/4 cup full. Spread each slightly with a spatula.
Cook until batter bubbles. Turn and cook until golden.
Makes 9 pancakes.
