    Oatmeal Pancakes with Maple Cranberry Syrup


    1/2 C rolled oats
    1/4 C flour
    1/4 C whole wheat flour
    3/4 C (melted) butter
    1/4 C Maine milk
    1 Tbsp sugar
    2 Tbsp canola or vegetable oil
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 (or 1/4 c. egg free product) egg
    1/2 C Maine Maple Syrup
    1/4 C whole cranberries
    1/2 C fresh Maine Wild Blueberries

    Spray griddle or 10 inch skillet with cooking spray. Heat to 375 degrees or medium heat.
    Combine oatmeal, flours, sugar, baking powder, baking soda and salt together. Add butter, oil, and egg together and stir in slightly. Pour slightly less than one fourth cup of batter onto hot griddle. Cook pancakes until puffed and dry around the edges. Turn, add Maine blueberries, cook until golden brown. Top with syrup. Delicious !

    To make Maple Cranberry Syrup: Combine maple syrup, whole cranberries. Heat over medium heat until cranberry sauce is melted.
